Our chocolate & banana BBQ skillet cookie is a showstopping finale for al fresco dining occasions. Packed with rich chocolate and sweet banana, this crowd pleaser is easily prepped and baked, making it the perfect hosting dessert for summer nights.

Top tips

If making on the BBQ, do not bake on piping hot coals. Cook your savoury food first, then pop the cookie on at the very end.
Coal BBQ: Bake on cooled coals for 30-35 minutes, checking regularly to ensure the cookie doesn’t burn.
Gas BBQ: Bake on the lowest heat setting for 20-25 minutes, rotating halfway for an even bake.
Oven: Bake at 165°C (fan) for 20-25 minutes until golden and crisp on top and gooey in the centre.

Method

Step 1

Lightly grease the skillet with unsalted butter and set to one side

Step 2

In a large mixing bowl, combine the two sugars and mix in the melted butter, followed by the egg

Step 3

Mash ⅔ of the banana with a fork and add to the mix, dicing up the remaining third to sprinkle on top at the end

Step 4

Add in the flour and bicarbonate of soda and mix until a thick batter forms

Step 5

Stir in ⅔ of the chocolate chips then transfer the batter to the skillet

Step 6

Top with the remaining chocolate chips and banana pieces then place on the BBQ. If your BBQ doesn’t have a lid, cover the cookie with foil for a more even bake

Step 7

To serve: Sprinkle a little sea salt (optional) divide and spoon the cookie into bowls and serve warm with vanilla ice cream
