Literally the easiest cookie recipe I’ve ever made. My ten-year old followed this recipe without any supervision while I took hoovered the hall. By the time I’d finished, the cookies were ready to go in the oven. No word of a lie. And when they came out of the oven – they actually looked exactly like the photo.
You can also freeze the cookie dough. Mould into in 60g balls and freeze on a tray or plate. Once frozen you should pop them into an airtight bag or box and when you’re ready to bake them they can go onto a lined baking straight into the oven frozen. They’ll need an extra 3-4 minutes cooking time.

Preheat your oven to 160°C, and line your baking tray with baking paper.
In a mixing bowl combine the flour and bircarb. Set to one side.
In the another bowl, melt the butter in the microwave and mix in the sugar before adding the egg.
Add the wet mix to the dry flour mix and bring together with the wooden spoon to form a dough.
Divide the dough into 60g balls and place on the lined baking tray, leaving room to spread between each one. Push each ball down slightly then place in the oven for 6 minutes.
After the 6 minutes take the cookies out of the oven, press 2 squares of chocolate into each one, rotate the tray then bake for a further 6 minutes.
This is genuinely the hardest step ... Allow to cool slightly on the tray before serving. And they are better eaten cold.
