Preheat the oven to 180°C/fan 160°C/gas mark 4 Sift flour into a bowl with the sugar
Rub the butter into the flour and sugar with your finger tips. When the dough begin to form shape, add a few drops of vanilla extract and knead in some of the sprinkles. These may fade in colour when baked depending on the type of sprinkles that you use
Roll the dough out on a lightly floured surface and use the star cutters to cut out shapes
Place on the baking sheet and chill in the fridge for 30 minutes before baking for 15-20mins. When golden, remove from the oven and leave to cool on a cooling rack
Once the biscuits are fully cooled, melt the white chocolate and dip each biscuit halfway into the chocolate. Decorate with sprinkles on top of the melted chocolate and leave aside to set
