Preheat the oven to 180°C/160°C fan. Line a baking tray with greaseproof paper.
Put the mixed fruit and demerara sugar aside. Add all other ingredients into a mixing bowl & beat well. Add the mixed fruit and mix in gently.
Spread evenly in the tray and bake for about 30 minutes. The cake should shrink away from the edges of the tin and spring back when pressed in the centre.
Take out of oven and if desired, sprinkle with demerara sugar. Leave to cool in the tin. Once cooled, the traybake can be cut into individual pieces.
