Serve 1

Drain and flake a small can of tuna and mix with 3 tbsp canned or frozen sweetcorn and half a finely chopped onion. Lightly toast 2 thick slices of wholemeal bread. Spread 3 tbsp ready prepared pizza topping over each slice. Top with the tuna and a handful of grated cheese and pop under a medium hot grill until the cheese starts to bubble

Heat 2tsp of oil in a saucepan, add 2 chopped sticks of celery and 1 finely chopped onion and cook for 1-2mins. Add 400g can mixed beans, 400g chopped tomatoes, 1tsp soy sauce, 1 tsp smooth mustard, bring to the boiled then reduce the heat and simmer for 10mins. Roughly chop 227g reduced fat smoked sausage and stir into the beans. Lightly toast 4 thick slices of white toast, spoon to bean mixture over the toast, sprinkle with a little parmesan cheese and serve with salad
