Method

Step 1

Stand the muffin cases in the holes of a muffin or tart tray and pre-heat the oven to 190°C/Fan 170°C/375°F/Gas 5.

Step 2

Sieve the flour into a bowl, add any sieved bran to the bowl, add the sugar and stir to combine.

Step 3

Separate a tablespoon of sultanas and put to one side, add the rest to the bowl and stir until they are covered with flour.

Step 4

Break the egg into a jug, add the oil and beat together well. Pour the mixture into the flour bowl and mix everything together well.

Step 5

Spoon the mixture into the muffin cases. Press the reserved sultanas into the top of the muffins.

Step 6

Bake for 18–20 minutes.
