Thai prawn cocktail sandwiches

This delicious sandwich recipe is quick to make and is a perfect way to ring the changes for an old favourite filling.

Method

Step 1

Spread half the slices of bread with butter.

Step 2

Mix the mayonnaise with the lemon zest, and sweet chilli sauce and spread over the other 6 slices.

Step 3

Top with the prawns and cover with lettuce.

Step 4

Place the other slices of bread, buttered side down on top then cut the sandwiches in half.
