Tomato and goats cheese bruschetta

This is great for a light lunch or for supper with friends. Pesto or mozzarella cheese could be substituted for the goat’s cheese.

Method

Step 1

Preheat oven to 190C gas mark 5.

Step 2

Arrange slices of bread on a baking sheet and drizzle with oil.

Step 3

Bake in preheated oven until golden and crisp on the outside, allow to cool.

Step 4

Spread with goat’s cheese and top with halved cherry tomatoes and fresh basil. Sprinkle with salt and black pepper and serve.
