Lay the tortillas out on a chopping board and spread each evenly with the Dijonnaise.
Mix together the cheeses, parsley and seasoning in a bowl then scatter over the tortillas.
Lay the wafer thin ham over the cheese on the tortillas, spreading out evenly to cover the cheese.
Carefully roll each tortilla up incorporating the filling then cut each wrap into 4 pieces diagonally, securing each piece with a cocktail stick in the middle to stop them from unravelling and this in turn also makes them great party nibbles too.
Serve immediately.
