Focaccia with artichokes, olives and grilled plum tomatoes

Method

Step 1

Preheat oven 220C/425F/gas 7.

Step 2

Evenly spread the foccacia with the tapenade.

Step 3

Brush the quartered tomato with oil and sprinkle with salt. Grill until lightly browned.

Step 4

Arrange the tomatoes on the foacaccia along with the artichoke and olives. Place the mozzarella cheese in the centre.

Step 5

Put in the oven for 7 - 8 minutes until heated through and lightly browned on top. Sprinkle with the oregano and serve.
