This recipe can be halved, quartered or doubled depending on how many blinis you’d like to make!

In a large mixing bowl, combine the flour, salt, egg yolk and milk to form a smooth paste.
In a separate bowl, whisk the egg white until stiff.
Fold the egg white into the batter until no lumps remain.
Heat a non-stick pan over a medium heat, and coat lightly with a little olive oil.
Drop 1 tbsp amounts of the batter into the pan and leave to cook until bubbles start to appear on the surface (approx 1 minute), then flip the blinis to brown them slightly on the opposite side (about 30 secs).
Remove from the pan and leave to one side while you repeat step 5 until all the batter has been used up.
Arrange your blinis on a serving platter and top with either: - a dollop of cream cheese, followed by smoked salmon or trout and a sprinkling of fresh dill OR - thin slices of pickled beetroot, followed by sliced or crumbled goats’ cheese, drizzled with honey and sprinkled with freshly chopped chives.
