Preheat the oven at Gas Mark 6/200C.
Lay pastry in the base of a 25cmx 36cm (10"x 14 1/2") swiss roll tin with any excess pastry going up the sides of the dish.
Spread on a thin layer of creme anglais and then add sliced apples.
Brush with apricot glaze and bake in oven for 30 minutes or until golden brown.
Allow to cool and serve warm.
