A quick and easy recipe for delicious muffins.
Stand the muffin cases in the holes of a muffin or tart tray and pre-heat the oven to 190°C/Fan 170°C/375°F/Gas 5
Sieve the flour into a bowl, add any sieved bran to the bowl, add the sugar and stir to combine
Separate a tablespoon of sultanas and put to one side, add the rest to the bowl and stir until they are covered with flour
Break the egg into a jug, add the oil and beat together well. Pour the mixture into the flour bowl and mix everything together well
Spoon the mixture into the muffin cases. Press the reserved sultanas into the top of the muffins
Bake for 18–20 minutes
