This cookie dough needs to be made in advance and chilled before using. Use straight from the fridge.

Put the butter and sugar into a mixing bowl and beat them together until light and fluffy
Beat in the egg
Mix in the flour and coconut
Using your hands, gather the mix together to form a smooth ball of dough. Shape and roll the dough into a 5cm/2” diameter cylinder. Wrap the dough in parchment and chill until firm.
When ready to bake, line a baking tray with parchment and pre-heat the oven to 180°C/Fan 160°C/350°F/Gas 4. Unwrap dough and cut slices the thickness of a pound coin. Transfer the slices to the prepared baking tray. Bake for 10-12 minutes, until golden
