Method

Step 1

Remove the crusts from the bread, then whiz the bread in a food processor to make fine breadcrumbs.

Step 2

Steam or simmer the broccoli for 5 mins until tender. Meanwhile, heat the oil and butter in a frying pan and fry the breadcrumbs with the garlic and chilli until golden brown and crisp.

Step 3

Drain the broccoli and scatter with the breadcrumbs.
